Ingredients
1 cup diced apple, about 1 apple peeled, cored and cut into 1/4” pieces
1 ½ cups granulated sugar, divided
1 ½ teaspoons kosher salt
1 ½ teaspoons baking powder
1 teaspoon freshly grated nutmeg (plus more for grating)
2 teaspoons ground cinnamon, divided
1/2 cup whole milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cups all purpose flour
Neutral oil for deep frying
In a small bowl, add the apples, one teaspoon of the cinnamon and a heaping tablespoon of the sugar. Toss to coat and set aside.
In a medium bowl, whisk together ½ cup of the sugar with the salt, baking powder and nutmeg. In a large bowl add the milk, egg, melted butter, vanilla and whisk to combine. Add the sugar mixture and mix to combine, then stir in the flour. Fold in the apples.
In a medium bowl, add the remaining sugar and cinnamon and set aside.
In a deep fryer or large deep skillet, bring a few inches of oil to 375 degrees. Working in batches so as to not overcrowd the fryer, gently drop rounded tablespoons of the batter into the hot oil and cook, flipping halfway through until the fritters are deep golden brown and cooked through, about 3-4 minutes. Use a slotted spoon, transfer the fritters to a paper towel lined sheet tray to remove excess oil then transfer to the reserved bowl of cinnamon sugar and toss to coat. Let rest for 2 minutes to let the centers finish setting. Grate fresh nutmeg over the top and serve while still warm!
