
CHERRY & ALMOND GRANOLA
MAKES ABOUT 5 CUPS
Homemade granola is sooooo superior to anything you can buy —toasty, complex, and sweet, but not too much so. All you need is a dollop of really good yogurt and a drizzle of maple syrup to make your morning instantly better.
3 cups rolled oats
1/4 cup neutral oil, such as vegetable oil
1 large egg white
1/3 cup packed brown sugar
1/3 cup honey
1/2 teaspoon almond extract
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 cup toasted slivered almonds
1 cup dried cherries
1 cup toasted coconut flakes
2 tablespoons dried rose petals (if you can find them)
PREHEAT THE OVEN TO 300°F.
In a medium bowl, combine the oats, oil, egg white, brown sugar, honey, almond extract, cinnamon, and salt and stir until the oats are evenly coated. Spread the mixture out in an even layer on a baking sheet. Bake for 45 to 50 minutes, until golden and toasty. Let cool completely. Transfer the granola to a large bowl and add the almonds, cherries, coconut, and rose petals. Toss to combine. Store the granola in an airtight jar for up to one month.
