
GLAZED MEATLOAF
SERVES 8
FOR THE MEATLOAF:
1 pound ground beef
1 pound ground pork
1/2 cup shredded carrot
1/2 cup chopped onion or shallot
1/2 cup grated pecorino cheese
1 cup 1/2-inch bread cubes, such as crusty sourdough
1 tablespoon fresh thyme leaves
1 large egg
1/3 cup whole milk
1 teaspoon kosher salt
6 twists black pepper
FOR THE GLAZE:
1/4 cup packed light brown sugar
1/2 cup ketchup
1 tablespoon Dijon mustard
Preheat the oven to 375°F.
START THE MEATLOAF: Combine the ground meat, carrots, onion, cheese, bread cubes, thyme, egg, milk, salt and pepper in a large bowl and use your hands to mix until everything is very well combined. Pack the mixture tightly into a 9 X 5-inch loaf pan.
MAKE THE GLAZE: In a medium bowl, whisk together all of the ingredients until well combined.
Brush the top of the meatloaf with a thick coat of glaze. Transfer to the oven and bake until bubbly around the edges and cooked through and the internal temp reaches 150°F, about 45 minutes.
Let the meatloaf rest for 10 to 15 minutes, then remove from the pan and cut into slices, and serve.
